Light and Fluffy

The pancakes were light and fluffy, just as they were promised.

I wish to post a quick thank you note to all those that participated in the pancake feed. As is always the case, the kitchen was in chaos, but tasty and safe food was enjoyed by over 130 people.

The youth brought in their “music” and kept a party like atmosphere throughout the hard work. Everyone came away with good feelings of accomplishment and fellowship.

I wish to extent special thanks to the clean up crew and the adult helpers. We had tons of dishes, flatware, pots and pans to get cleaned and put away just in time for the next chef to take over the kitchen. We are blessed to have a such a highly utilized kitchen!

We had one comical mishap in the kitchen. After everyone was fed, a pan of fresh hotcakes tipped over and landed on the floor between the grills and the service counter. We had to wait for the grills to cool before we could clean them up.

I was pleased that everyone had their fill before that happened. Then, to my surprise, I was tickled to find the drawing on my clipboard, of a warning for next year (see picture).

2012-2013 Sunday School Teachers

It’s getting close to that time of year to start thinking about teaching Sunday school next year. We will especially need support in Pre-Kindergarten and 2/3rd grade classes. Please consider the call to teach young ones.

What does it take to make a great pancake?

I’ve not been known for my great pancakes. Sometimes they are less than perfect. So when I was asked to lead the youth in Pancake Delights, I did a little research. My favorite go-to TV chef Alton Brown has some pointers. His humorous and scientific approach to cooking appeals to me and I find his advice to be right on the spot.

Pancakes should be tall and fluffy. It takes a combination of acid and a base to make the bubbles happen. Buttermilk and baking soda do the trick nicely.

Pancakes cook best when the griddle is 350 degrees. So, I dug into the back of my gadget drawer to find the infrared thermometer. A.B. (Alton Brown, as his fans call him) says that if you dont have a infrared thermometer handy, make the water dance. Drop some water on the grill, and see if it dances! If it just lays there, turn up the heat, if it turns to steam….turn it down.

Mix the dry ingredients and the wet ingredients separately then combine. The batter should be lumpy, do not mix smooth. And it should be left to rest for 5 minutes. Why? To allow the leavening to create a bunch of little bubbles.

Rub the griddle down with a little butter, then wipe it up with a paper towel, there will be enough fat left to do the job.

Use uniform batter application, choose a 1/4 cup measurer to do each cake.

Flip the pancake in one fluid motion, right after the bubbles start to form. This usually takes three minutes on the first side and two minutes on the second.

I think, with this advice, we will be serving the best ever pancakes. Come and see how this advice works out for me and the kids! Sunday the 19th right after church.

We will be baking gluten-free pancakes on a made to order basis as well as vegetarian sausages or turkey sausages. Whoot…….something for everyone to enjoy!

Details:

Everyone meet in Collins Hall at 5 p.m.

Kids should wear comfortable play clothes and bring sack-lunch style dinners.

Grown ups will head out together to dinner destination and return to the church around 7:30 p.m.
